Der Name „Dalmore" ist halb gälisch, halb altnordisch und bedeutet „große Wiese". Gegründet wurde die Destillerie 1839 von Alexander Matheson. Die Destillerie befindet sich am Ufer des Cromarty Firth, gegenüber den fruchtbaren „großen Wiesen" der Black Isle. Das Wasser, dessen Reinheit für die Herstellung eines Whiskys eine sehr bedeutende Rolle spielt, kommt aus dem naheliegenden Fluß Alness.

The name "Dalmore" is half gaelic and half ancient nordic and means "large meadow". The Distillery was founded in 1839 by Alexander Matheson. The Distillery is situated on the bank of the Cromarty Firth, towards the fertile "large meadow" of the Black Isle. The water, which cleanness plays an important role for the production of whisky, comes from the nearby river Alness.

Die Gerste für das Malz wird bei The Dalmore zwei bis drei Tage eingeweicht und danach auf dem Malzboden ausgebreitet. Genau zum rechten Zeitpunkt wird dieser Keimvorgang abgestoppt, indem man das gemälzte Getreide in den für Malz-Whisky-Brennereien typischen Darren, den sogenannten Kilns trocknet. Der Rauch aus dem brennendem Torf verleiht dem Malz ein mildes Raucharoma.

The Barley for the malt is soaked for two to three days at The Dalmore and then it is spread out on the malting floor. Exactly at the right point of time, the germination process is stopped, by drying the malt in the kiln, which is typical for Malt-Whisky-Distillerys. The smoke of the burning peat lends the malt a mild smoke flavour.

Jede Malt-Destillerie hat ihr „kleines Geheimnis". Das Geheimnis von The Dalmore ist die Alterung in ausgesuchten Oloroso Sherry-Fässern und in traditionellen amerikanischen Weißeichenfässern. Diese zwei verschiedenen Typen von Holzfässern geben dem Charakter von The Dalmore eine ganz besondere Nuance. Nach ca. 12 bis 15 Jahren werden die Malts vermählt, aber erst eine Woche vor der Abfüllung auf die endgültige Alkoholstärke von 43% reduziert. Hierdurch wird die konstant hohe Qualität von The Dalmore erreicht.

Every Malt-Distillery has its own "little secret". The secret of The Dalmore is the maturation in selected Oloroso Sherry-Casks and in traditional American white oak-casks. This two different types of wooden casks give to the character of The Dalmore a very special shade. After about 12 to15 years the both malts are married. But just one week before the bottling the final alcoholic strength is reduced to 43%. By this the high quality of The Dalmore is reached.
