Maturity vs. Age
When is an athlete in his prime? When is a wine ready to drink? When should steak be taken from the broiler? There is a point in life on an athlete, in the life of a wine and in the cooking of a steak when it is at its prime time - "the peak of perfection". After this point, the athlete loses coordination, the wine sours and the steak burns. This is true for fine whisky - the maturing process must be controlled so that the whisky can be brought to maturity and bottled before it passes that "peak of perfection". At Early Times we constantly work toward this goal - "the peak of perfection" - in every step of our whisky making.
